Ingredients For Chicken Caccitore


Chicken pieces or chicken breasts
sliced mushrooms
1 onion
2 green bell peppers
1 zucchini
punnet of grape or cherry tomatoes
large tin of tomatoes
tomato paste
crushed red pepper flakes about a teaspoon
olive oil
italian seasoning 1 or 2 T
salt
pepper
minced garlic - one or two teaspoons
fresh rosemary about 3 or 4 sticks, put whole things in
half to one cup of chicken stock

Method



Put some olive oil in pressure cooker and brown chicken,
Remove chicken and set aside for the time being on a plate while you cook onion, until transparent, a couple of minutes, then add all other ingredients to the pressure cooker, including chicken,put lid on pressure cooker and wait for it to build up pressure, then cook for approx 20 minutes. Once cooked release pressure and remove rosemary sticks, give a stir and is ready to serve.

This is a recipe I've made to be my own over time and taste testing. Traditionally black olives are also part of Chicken Caccitore but I omit them, as my kids are not fans of olives. Easy to add with all the rest of the ingredients. I find this recipe to be flavourful and popular with the kids.

What To Look For In A Stovetop Or Electric Pressure Cooker

Apricot Paprika Chicken

First time making this Apricot Paprika Chicken. It was easy to make and very tasty. I have a sweet tooth so I like the apricots sweetness and honey that was in the recipe. Was not overly sweet though as there was also ginger, white vinegar, white wine and paprika to offset that sweetness. Next time I make it I would use larger chicken pieces and double or even triple the sauce recipe. Loved the sauce. Tasty! :)

Ingredients

Chicken Breast or Chicken Pieces
olive oil
salt and pepper
teaspoon of paprika
half teaspoon of marjoram (can be fresh or dried)
half cup of white wine
half cup of chicken stock

Apricot Sauce
half a cup of apricot jam
1 tablespoon vinegar
1 and half teaspoon of ginger (can be dried or fresh)
4 tablespoons honey

Method

Heat olive oil in pressure cooker, put paprika and salt and pepper on chicken, then brown chicken. Remove chicken and then add wine and stock to pressure cooker.
Mix together apricot sauce ingredients then add to pressure cooker with chicken. Put lid on and let pressure build then reduce heat and cook for about 15 mins.
Release pressure when finished, remove chicken then put heat on pressure cooker with lid off and thicken sauce a little bit more. Pour over chicken, then ready to eat. :)

This is my own recipe and measurements are not really too accurate as I usually just cook
to what tastes good.

Ingredients
beef cut into chunks
onion cut into slices
1 or 2 green bell pepper cut into slices
tinned tomatoes large can whole
chicken or beef stock about half a cup
paprika about 2 T
salt and pepper
carrots bag of baby carrots
red potatoes cut into chunks, can keep skin on after washed
olive oil

Method
Put some olive oil in pressure cooker and brown outside of meat.
Remove and then add onion and cook till transparent, add paprika and cook for about a minute
till the flavour is released from the paprika, add back the beef and mix till coated with paprika.
Add all other ingredients.
Put lid on pressure cooker and when the button goes down, set timer for 15-20 minutes and lower heat.
Can used pasta for side dish or just eat on own, its pretty hearty and the beef is lovely and tender after having been in the pressure cooker
I would say it easily feeds four, especially if you add a side dish to it.
